Recently, Kim Stuart, captain of the Kidusi fishing vessel, has taken time off the high seas to answer a few questions about his company, Tailchasers, and the experience of deep-sea fishing in Hong Kong for All That Junk.

How did you get started as a captain of a deep sea fishing boat in Hong Kong?

I have been on and off boats most of my life. My father had one in Kenya. Later I have decried for a number of boats here before buying my own some 13 years ago.

What have been your biggest catches?

Biggest sailfish was 80 lbs (35+kg) and a black marlin weighing approx 150 lbs (68kg). Both were released.

Is deep sea fishing for first-time fishermen?

Yes, I’m happy to teach new anglers.

Will first-timers need to buy their own gear?

No, we have more than enough on board.

Are children allowed on board? Is it a good experience for them?

Depending on the weather conditions, but no children younger than 7 years old are allowed on board. All of my children have been out fishing

What is our favorite recipe for a fresh catch?

Panfried fresh Mahi Mahi in butter and garlic dash of lemon
